Ladies,

We are committing to Opening Our Home this Year since we are on the Back End of getting settled and fixing everything that need repair with our home.

I have a concern about Meal Prep related to this!

My Meal Planning includes meals that I know OUR children like (and we have picky ones ~grin~). However I need some Tried-and-True meals that will include things that MOST children like!!

HOW do you usually handle this??? Do you just make an extra meal for the kids that includes Hot Dogs and Mac-n-Cheese?............though this seems a bit labor intensive??? I really need some direction in this! Don't know really what is the best approach????

If you have the Sue Gregg cookbooks, her Ragout made with seasoned ground turkey is a huge it. I have NEVER had a child not gobble it up and beg for more. Parents go into a state of shock on how much their children are willing to eat of it. Seriously! If you have a food processor, it is a snap to make. I use more chicken broth than the recipe calls for, so it is more moist.

Our standard entree for guests is turkey breast. Since I buy this fully cooked at Sam's, I am also saving meal prep time. Planning is easier--just a couple side dishes, bread and dessert. For sidedishes I choose one very kid-friendly, then others that are generally well-liked. For example, Mac & Cheese or hashbrown casserole, then green beans or carrots. Often instead of trying to serve tossed salad, I just put some raw veggies with dip on salad plates. (so kids can double-dip if they want) I serve cressant rolls or biscuits. Keeping the foods simple seems to help.

Meals that folks can put together are bound to have something for everyone. For example...

potato buffet (baked potatoes with bowls for toppings... grated cheese, sour cream, cream cheese, green onions, bacon, broccoli, cheese sauce, ham)

tortilla buffet (soft tortillas, hard tortillas, fajita mix, refried beans, lettuce, tomato, onion, grated cheese, cream cheese, rice, salsa, chicken, taco meat, black olives, jalapeno peppers)

fix your own sandwiches (cold cuts, shredded BBQ pork, egg salad, tuna salad, lettuce, tomato, onion, mayo, mustard, assorted breads and wraps)

Some things we've enjoyed here or other places....
*lasagna, half with meat, half plain and then another pan with meatballs in sauce
salad and bread

*make your own pizza and salad

AimingHigh - I'm curious as to what 'ragout' is. Are we allowed to post a recipe if it's in a cookbook? I'd love the recipe you mentioned. Thanks!

If a recipe is in a cookbook, then it is copyrighted.

Lisa_in_NC,
Ragout is vary similar to "stew". In fact, I think it might be a synonym. I, however, really don't care for stew in the traditional sense, but love the Sue's ragout recipe. Sue Gregg cookbooks are copyrighted, so I can't post the recipe. I mentioned the ragout recipe because I've read there were quite a few ladies on this forum that have her cookbooks. Sorry I can't be of more help.

I have 2 small children (ages 7 and 4.5) and we've always found that chicken parmesan is a huge favorite for a dinner party. The kids like it and it's nice enough to serve for adults and if you make some pasta, bread, and Caesar salad, it's a perfect meal (and practically no hands on time once the guests have arrives since everything is done ahead).
