Bosch Whole Wheat Bread Recipe

This makes 4 loaves. You can try to modify for another kitchen mixer, but I have included instructions for the Bosch. Here you go!!
4 cups hot tap water
1/3 cup honey
2/3 cup olive oil (you can use another oil)
Heaping T salt
2 T dough enhancer (I use Grandma Eloise's)
1/4 cup gluten (I use Blue Chip Baker Vital Wheat Gluten)
3 T SAF yeast
9-11 cups fresh whole wheat flour
1. In the Bosch bowl, attach dough hook and pour in hot water. Add the honey, oil, salt, gluten, dough enhancer, and 6 cups of the flour. Mix on speed 2 until mixed in. Add 2 more cups of the flour with the yeast on top of the flour. Mix on speed 2. Cover bowl and let rest 10-20 minutes.
2. Begin adding flour little by little with machine running on speed 2. You will know when you have added enough flour because the sides of your mixing bowl will be clean. When sides are clean, knead on speed 2 for 4-7 minutes. With oiled hands, pull of a small amount of dough and see if you can stretch it almost transparent without tearing. This is how you check your gluten development. If it tears right away, you need to knead a little longer.
3. When the kneading is finished and your gluten is developed, pour your dough out onto a greased surface. Cover and let rest 10-20 minutes again.
4. Shape dough into a circle and cut into 4 equal pieces. This will equal 4 large (4 1/2 x 8") loaves. Each piece also equals two mini loaves or 2 pizza crusts.
5. Shape the loaves by hand or by rolling out. To roll out (this method gets rid of air bubbles) you roll it out on a greased surface with a greased rolling pin 2x the length of the bread pan and the same width as a bread pan. Start with the end farthest away from you and roll up tightly toward you. Tuck ends under. Slam down on your counter a few times to get rid of any air bubbles between your layers. Put in greased pans.
6. Let rise in a warm place, covered, for at least 35 minutes. Bake 25-30 minutes in a 350 oven until the top is nice and brown and the loaf makes a hollow sound when tapped on the bottom. Cool on racks. Do not put in bags until completely cooled. I freeze extra loaves in the bags.

Don't get discouraged if your loaves look funny at first. You'll get used to shaping them as you go along. When I first started you could see the layers in my bread from where I rolled it.
Make sure you have good loaf pans. I use Norpro, also available at the above link.
Never use cold flour OR freshly milled flour. I used to mill my flour and then bake bread right afterwards. This resulted in a grainy, coarse crust. Let it sit for at least an hour or 2 before you start baking.
This bread comes out soft and delicious every time. I haven't had any success trying to modify it to 6 loaves, so I just stick with this 4 loaf batch and make 2 batches on baking day. Good luck and feel free to email questions!!

Can you Cut recipes like this in half? My mixer won't do all the flour and I have trouble finding recipes with lower amounts for flour. Has anyone ever cut recipes like this in half successfully? Or do I just have to kneed it by hand with the extra flour?

I got a few emails for this smaller recipe (Leah IL is my new screen name, it used to be lk31). This is the recipe for the 2 loaf batch of bread.
2 1/2 cups hot tap water
1/4 cup honey
1/4 cup canola oil
1 T salt
1 T dough enhancer
2 T gluten
2 T yeast
6-8 cups fresh whole wheat flour
Use the same general directions as above, but put 4 cups of flour in with the liquids before mixing the first time. Then add 1 cup of flour with the yeast on top. This makes 2 large loaves. Feel free to email me with any questions!
