Here is a recipe I came up with after some tweeking. I keep them in the freezer and we either eating them frozen or let them set for a few minutes. They are moist and preservative free so if you live in a hot humid area they might get moldy if left in a cookie jar for too long.

Laura's Guilt Free ChocoChip cookies

1/2 cup prune puree
2 tablespoons oil -- light olive oil
3 tablespoons egg substitute, liquid -- or equiv to 1 egg
3/4 cup sucanat -- or brown sugar
3/4 cup date sugar
1 teaspoon vanilla
1 1/4 cups whole wheat flour
1 cup unbleached flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup chocolate chip -- mini sized or chopped
Preheat oven to 350.
Cream the prune puree, oil, egg substitute, sucanat (or sugar), date sugar and vanilla together.
Combine dry ingredients and beat into creamed ingredients.
Add chocolate pieces.
Prepare a cookie sheet with non-stick spray. Using a small ice cream scoop drop dough onto sheet.
Bake for 15 minutes until cookies begin to brown. Cool for 2 mintues then remove from tray. Store in airtight container.
