Whole Wheat Chocolate Chip cookies?

Can I just replace the flour in a regular recipe with fresh ground WW??

anyone with a tried/true recipe?

I'm also going to replace the white sugar with sucanant with honey....... Could I use this for all the sugar and skip the brown sugar?

I make the recipe on the back of Ghiradelli chocolate with freshly milled soft whole wheat and sucanat. I do not put in the brown sugar but substitute the sucanat for all for all sugar. I don't know what the honey would do in a reicpe but I'd give it a try. Annette

Half the sugar and half the fat. Here is my tried and true chocolate chip recipe. I might say before hand that a good chocolate chip cookie is all in the consistency of the dough. You want it to be fairly stiff but hold together. It should pull away from the sides of the bowl when mixed.

2c. whole wheat flour
1c brown suger or sucanat
1tsp. baking soda
1tsp. salt
2eggs
1tsp.vanilla
1 stick of butter (softened)
1 1/2 c. chocolate chips

Mix everything but the chocolate chips. Add them last. Mix a little more. Scoop out by the spoonful and place on a cookie sheet. Bake 12-15 minutes at 350. Because of the whole wheat, they need to cook a little longer. If you are used to white flour cookies, it will take getting used too. But hey! at half the sugar and half the fat of regular chocolate chip cookies, we got used to them real quick. I don't even like white flour cookies anymore. Hope they turn out good for you. Chocolate chip cookies are my favorite dessert.. pls

Annette -- Me again! What is sucanat and how is it used? We are trying to change our eating habits, since I have been diagnosed with diabetes.

I just used the Toll House recipe on the back of the chips and used ww flour for the flour and reduced the sugar by half...the cookies were a bit different,but still devoured here!

Is sucanat healthier for us?

Here is a recipe I came up with after some tweeking. I keep them in the freezer and we either eating them frozen or let them set for a few minutes. They are moist and preservative free so if you live in a hot humid area they might get moldy if left in a cookie jar for too long.

Laura's Guilt Free ChocoChip cookies

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup prune puree
2 tablespoons oil -- light olive oil
3 tablespoons egg substitute, liquid -- or equiv to 1 egg
3/4 cup sucanat -- or brown sugar
3/4 cup date sugar
1 teaspoon vanilla
1 1/4 cups whole wheat flour
1 cup unbleached flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup chocolate chip -- mini sized or chopped

Preheat oven to 350.

Cream the prune puree, oil, egg substitute, sucanat (or sugar), date sugar and vanilla together.

Combine dry ingredients and beat into creamed ingredients.

Add chocolate pieces.

Prepare a cookie sheet with non-stick spray. Using a small ice cream scoop drop dough onto sheet.

Bake for 15 minutes until cookies begin to brown. Cool for 2 mintues then remove from tray. Store in airtight container.

Yield:
36 cookies

Ladies,
Sucanat is dehydrated cane juice and is much better for you than the refined white sugar. Remember though that it is still a sweetener. I use it place of all white sugar and I can always tell when my dc have had white sugar.
Anyway about the diabetes. I don't know if it is a good alternative but I'm sure you could find more information on the internet about what it does to your blood sugar. Annette

For those of us who do not mill our own flour, replacing white flour with whole wheat pastry flour cup for cup in a chocolate chip (or any) cookie recipe works very well. I just made a recipe today that was similar to the one pls submitted above and used the whole wheat pastry flour, substituted sucanat for all sugar, and used grain sweetened chocolate chips. I used real butter. Everyone loved them! They were not dense.
