As sad as it is to say, about the only thing (meat) in my freezer right now is a bulk package of ground pork--about 2 pounds, Id say. And payday isnt for another week! Im not unrealistic here... I know there isnt any way to stretch 2 pounds of pork between 6 people for 8 days, lol, but I would appreciate any ground pork recipes out there for at least one decent meal. I know if I had some ground beef I could make meatballs or meatloaf, etc... but what to do with just the pork?? HELP!
Thanks in advance to all you creative ladies.

Hawaiin pork
It is a sweet and sour meatball and we love it with rice
Mix the pork with cracker crumbs, chopped onion, an egg, powdered ginger and some milk. Form into balls and cook through.
Make up the sweet and sour sauce using the juice from pineapple chunks, some soy sauce, green pepper chopped and vinegar. Mix well in saucepan and cook a minute or so then add some corn starch to thicken. Continue cooking on medium heat until the green pepper is tender-crisp. Add the pineapple chunks. We serve this by putting the meatballs into the sauce and putting on brown rice.

I found this thread a little late, but here's a good fall recipe. Take a butternut squash and split in half legnthwise, deseed (save those seeds and toast them with salt, yummy!) and put flesh side down and bake until tender. Remove the flesh...leaving two shells. Mix flesh with browned sausage and onion and return to shells. Top with bread crumbs and or cheese if desired. Return to the oven and bake until hot and cheese is melted. Yummy all in one dish. |

I am new here so my input to your question comes late -- but I wanted to share with you. We raise our own meat, pork included. So we use a lot of ground pork. I use it in most recipes that I would use ground beef, lamb or goat. Spaghetti sauce, for example. Lasagne or other pasta dishes. My favorite weekend dish: take equal parts of ground pork and pureed vegetable - carrots, onions, peppers, some seasonings and my favorite herb blend, and work together like a meat loaf. Then, using pizza dough, make small turnovers and bake them. One pound of meat to one pound of vegetables stretches a long way! They freeze well, too. |
