We rarely eat steak but we do chicken. For the boneless chicken breasts my family likes them marinated in Italian dressing and then grilled or dip them in melted butter and roll in crushed rice krispies (instead of marinating in Italian dressing). Bake in a 350 degree oven until done, probably about 20 minutes or so. As for pork we usually only eat boneless pork chops when the whole roll goes on sale. I bring it home and cut it up into chops. Those I usually just pan fry. With the fatty part of the roll I cut the fat off and chop up the meat and use it in stir fry. For stir fry I just stir fry the meat then put it on a plate with another plate on top to keep warm. In the same frying pan I make a box of beef flavored rice (the kind you brown then add the hot water and seasoning packet). In a seperate pan I heat up a bag of frozen stir fry veggies. When the rice is almost done (still a little saucy) I dump the rice, veggies and meat all in a bowl and mix. That's dinner! For my family of 8 I use 2 or 3 boxes of rice mix and 2 bags of frozen veggies.

ASM , Could you post your recipe for Salisbury steak? - I've been looking for a good one for quite some time. We have liked all of your recipes that we've tried so I keep a lookout for your recipe posts. TIA-Melissa

Here you go.
2 tsp oil
2 tsp butter
1 onion sliced in rings
1 pound hamburg
1 egg
1 tsp salt
1/4 tsp pepper
1/2 cup cream or milk
Saute onions in oil and butter and then remove onions from pan. Mix other ingredients and shape into oblong patties. Fry in pan used for the onions. Serve with pan juices and onions.
This recipe has a special place in my heart because a dear friend made it for dh and I with mashed potatoes and other good things. It was a valentine present. She came to my house and watched our dc and dh and I went to her house to a candelight dinner in her quiet house. She had music playing and it was such a sweet time. Annette

I could probably go on....I think all my food is their favorite!!! Most of these are my hubby's favorites..my kids are hit or miss...one may love it...another not....I cook dinner to please my hubby's taste...I cater lunch to the kids!

I've never made dumplings before. I understand they are pretty simple. Can you help me out with a recipe? I'm sure my crew would love for me to make some.I would probably need the instructions for how you cook the chicken with them too. Thanks, Annette

Here it is...finally...

GENERAL TSO'S CHICKEN

Sauce:
1/2 cup cornstarch
1/4 cup water
1+1/2 tsp minced garlic
1+1/2 tsp minced ginger root (or ginger powder)
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup cooking wine
1+1/2 cup hot chicken broth

Meat:
2lbs chicken cut into chunks
1/4 cup soy sauce
1/2 - 1 cup cornstarch
vegetable oil for frying
1 cup sliced green onions
8 small dried hot peppers
(I use a small amount of chopped peppers so it's not too hot for the children.)


Mix 1/2 cup cornstarch with water. Add garlic, ginger, sugar, 1/2 cup soy sauce, vinegar, wine, chicken broth. Stir until sugar dissolves. Set aside. In a separate bowl, mix chicken with 1/4 cup soy sauce. Coat with cornstarch, deep fry in hot oil until crispy. Drain on paper towels. Place small amount of oil in wok and heat until wok is hot. Add onions and peppers and stir fry briefly. Stir sauce and add to wok. Place chicken in sauce and cook until sauce thickens. Serve over rice.

We do chicken parmesan a couple of different ways.
Sometimes we use breaded chicken breasts and others not breaded. Either way cook boneless chicken breasts on the stove. The place them in a baking dish, sprinkle parmean cheese on the chicken then add shredded mozzarella on top of each piece of chicken, cover all of that with spaghetti sauce and bake for about 20 minutes at 350. Serve with spaghetti or other pasta.

Meatballs are so very easy. Just mix ground hamburg and garlic. Form into 1 inch balls and bake in the oven until they are cooked through. Depending on what I'm making them for I will also add different seasonings. If I want them for meatball grinders, to have with spaghetti then I add italian herbs (oregano, basil, parsley), if they are to be for swedish meatballs then I add pepper. Annette

Chicken and Dumplings...

I don't measure so this might not help you much...

Take a big soup pot and fill at least 1/2 with water. Add chicken pieces...I use thighs (they are cheap here). To this I add salt, garlic salt, celery seed/salt, and chicken boullion powder. Let cook until chicken is done on a med/low heat. Take chicken out of pot and take off the bone, cut into small pieces. Add back to broth and bring back to a boil. Then take biscuit dough (in a rush canned will work) and pinch off pieces to drop in the boiling liquid, make sure then go completely under the liquid..they will bounce back up...push over and drop another, etc... Cook until dumplings are done...fluffy inside. This is good reheated too.

Chicken Pockets:

2 cans cresent rolls
2 cups cooked chicken cubed, chopped, whatever
3 oz cream cheese
2 TBSP milk
1 stick butter
1 box croutons (flavor you like) crushed

Mix the chicken, softened cream cheese and milk together in a bowl. Open the cresent rolls and keep in a rectangle (two triangles)..you will get 4 per can, instead of 8 cresent rolls. Press the seams so they don't come apart. Place some of the chicken mixture on the dough and fold over and seal the edges.
Dip each packet in butter and then in the croutons to cover. Place on baking sheet (I use a pizza stone). Bake at 350 for 15 minutes or until browned.

I'll post the last two tomorrow.

Here are the other two:

Meatloaf (I have several recipes I rotate between, but this is the only one that doesn't have a copyright).

1 1/2 lb ground beef
2 eggs, beaten
1/2 c milk (can use rice dream, soy, etc.)
1 1/2 c cracker crumbs (saltines)
1/2 small onion, chopped
1/2 c ketchup + more for top
dash Worshchishire (sp?) sauce
salt
pepper

Place ground beef in a large bowl, add eggs and mix well (best with your hands!). Mix in the milk, cracker crumbs, onion; then add ketchup, worsh sauce, salt and pepper. Mix all well and form into a loaf. Place in loaf pan and cover the top in ketchup.

Bake at 325 for 1 to 1 1/2 hours. This makes one regular size loaf pan.


Chicken Fried Rice:

1 1/2 cups of white rice (raw)
1-2 cups cooked cut up chicken
soy sauce
green onion (chopped)
regular onion (chopped)
carrot (chopped)
Oil
Egg, beaten

Cook rice as normal and let it get good and cold...works well to make the rice the day before or even used leftover rice. Heat a small amount of oil in a wok (or large skillet), when hot add the rice and stir well. Add the carrots and onions continuing to stir so all gets good and hot. Then add soy sauce to taste---I just pour some in! Then add the chicken in and heat until hot. When all is hot, push the rice aside and add an egg or two beaten to the hot pan...stir to scramble....when cooked mix in with rice. (I'm sure there are better recipes, but my family likes it this way!)

Egg Drop Soup:

(Again, I'm sure there are better ways, but this has worked for us)

1 box Swanson Healthy variety of chicken broth
2 TBSP cornstarch
chopped green onion
1 beaten egg

Pour a cup of chicken broth in a cup and set aside. Add the rest to a pan and begin heating to a boil. Stir the cornstarch in with the reserved cup of broth and then add to the hot broth cooking. When it is to a boil slowly pour the beaten egg in, stiring with a fork the entire time to seperate the egg into "strands". Heat another minute or so. Serve hot, topped with onions. Chow mein or other crunchy noodles are good with it too.

Also have you ever made homemade cresent rolls, and do you think a thin biscuit would work for the chicken pockets

joyfullmom....I've never made cresent rolls. Part of the "taste" of this dish is in that flaky pastry so I would say they would have to be very similar. You could make a pocket with biscuit dough, but it wouldn't have the same taste and texture, etc... (Probably be just as good though!)

SoaringEagle: Thanks for posting the yummy recipe General TSO'S Chicken .I used beef instead of chicken. My whole family loved it ~ it was SO delicious! Definitely a keeper :)

Glad to liked it Jan, I was happy to find a good recipe as we often end up ordering it when we eat out - not often enough!! I forgot to add I usually add broccoli with it, you could steam for a few minutes if you like so it's a little softer. Enjoy.
