How to make turkey gravy

I often cook turkey breasts and half turkeys and my gravy does not turn out. Can anyone share how to make gravy with turkey drippings.

I heat the drippings on the stove, and then I mix some flour with either water or milk but usually water. After this is mixed, I pour it into the warm drippings and stir until the mixture thickens. I also add salt and pepper to the drippings.

My favorite way is to mix a couple of Tablespoons of flour with cold water (enough to make a thin paste). Heat the drippings on the stove (in the same pan as the turkey was cooked in if you can) to boiling and then add the flour paste being sure to stir with a whisk right away. Bring to boil and then turn the heat down and let simmer for awhile. Add whatever seasonings you used to cook the turkey or just pepper. If you need more gravy add cold water to the gravy and heat through. Annette

I prefer a cornstarch gravy with turkey--seems a bit lighter, cleaner. For every 1 cup of pan drippings: in a small jar shake 1 Tbs cornstarch in 1 Tbs cold water to blend. Whisk this slowly into hot drippings; stir till thickened. Add salt to taste. As ASM says, good to make it in the turkey pan so as to catch the browned parts!

If you have a problem with lumps in the gravy, pour a little bit of the hot drippings into the paste, mix then add to the rest. The key is to continually stir for no lumps. If you get lumps, blend in a blender a small amount at a time, it is hot! HTH
