I love Caesar Salad...

does anyone know how to make the dressing?
I usually get Caesar Salads at resturants. It's my favorite. The other day I found a "bag salad" marked down to $.59. I bought 2. But they didn't last long... let me tell you.
Can you make this at home? I'd love to.

Here's my recipe for this dressing:
1/2 cup light mayonnaise
2 cloves garlic, minced
1 Tablespoon each Worcestershire sauce, lemon juice and red wine vinegar
1/4 teaspoon Tabasco sauce (or other hot pepper sauce)
1/4 teaspoon pepper
1/4 cup olive oil
1/2 cup grated Parmesan cheese
Combine all ingredients in a blender. Blend until smooth.
I have been using this recipe for years, and my family loves it. My dds ages 10, 7 and 5 and also my dh have all requested the chicken caesar salad recipe this goes with often for their birthday suppers. :)

Here's mine:
1/2 cup olive oil
1/2 tsp dijon mustard
1 T lemon juice
1 T vinegar
1 T grated parmesan cheese
1 egg yolk
1 clove garlic
Put everything in the blender and blend until smooth.
Caesar dressing is supposed to have anchovy in it, but we don't like it. You can add an anchovy filet or two to the above ingredients before blending if you like that flavor. |

Caesar Salad is my dh favorite. I learned how to make it from my MIL.
I like the pampered chef dressing jar ? to make it in because it mixes the dressing befor pouring.
1 can anchivies
3 or so cloves garlic. (MIL cuts down the center of each and takes out the green centers says it is bitter)
Mince on a cutting board together until a paste
Mix with:
1 cup regular olive oil (not virgin) MIL uses Filippo Berio
1/2 cup cider vinegar
1 - 2 tsp. of Worchestersire sauce
Salt and pepper
This is the base
Rinse well and dry romain lettuce, tear into pieces
When ready to make salad:
Coddle 1 egg, means to boil 30 seconds
1/2 of a lemon juice
Grated parmesan and romano cheese About 1/3 cup each
Croutons
On top of lettuce add egg, juice, about 1/4 of base dressing, croutons and cheeses. Mix well.
This mixture also makes great croutons.

This is our ABSOLUTE favorite and is so quick and easy to make:
Caesar Salad Dressing:
1/2 cup mayo
1/4 cup milk
1 tbsp lemon juice
3/4 tsp worcestershire sauce
1/4 tsp pepper
1 clove garlic, pressed
1/4 cup parmesan cheese
(Combine all ingredients well, in bowl.)
