Buttermilk- need recipes to use.

I bought it yesterday used a 1/2 cup for a cake recipe and it expires today. I want to use it up in the next few days.
Other then pancakes what can I make

Please post recipe along with suggestion if you have one

I just used buttermilk in my cornbread tonight:

2 cups cornmeal
1 1/2 cups buttermilk
2 T oil
1 egg, lightly beaten
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
sugar optional to taste

Preheat oven to 450. Mix dry ingredients. Combine egg, oil and buttermilk. Stir into dry mixture and mix well. Pour into a well greased 9" cake pan and bake 20-25 minutes. Cornbread will pull from sides of the pan when done.

My husband doesn't eat wheat, so this is a flour-free recipe. There are other cornbread recipes that use buttermilk that include flour for a smoother textured result.

My 3 dbs love these scones.
3c. flour
1/3 c sugar
2 1/2 ts. baking powder
1/2 ts. baking soda
1/2 ts. salt
3/4 c butter softened (Melted ok)
1 ts vanilla
1 cup buttermilk
1 c. shredded cheddar cheese

Large bowl mix: flour, sugar, bp, bs,s.
Cut in butter.
Add vanila to measured buttermilk then add that and cheese to flour mixture.
Mix until it forms a ball.
Turn out on a lightly floured board, roll or pat into a rectangle about 8 x15 inches mainly about 3/4 inch thick. cut into 2 by 3 rectangles. Place on greased sheet a bit apart. bake 400 for 9 min. until lighlty brown. You can cut any way you want just giving an idea. They are tender when not over cooked. Chech one for doneness.
