Does anyone have a good recipe for minestrone soup?

I am looking for one like Olive Garden serves. The ones I have come across just aren't the same:-( (am I spoiled or what?!) I have had a taste for this soup and would love to learn how to make it from scratch. |

Hi! If you do a google search for "Olive Garden Minestrone" you will find a lot of "copycat" recipes. I also have my own minestrone recipe, but dh says it does not taste like Olive Garden's--he thinks mine is much better. If you would like, I can post it later.

This is one that I made combining several different recipes . It's not the same as olive garden although I like there's. Also feel free to add whatever you have on hand I don't do pasta in mine but you can and sometimes I add lentils just 1/4 to 1/2 cup. Sometimes I use fresh veggies carrots celery etc. Alot of times I add whatever I have around.
1 onion chopped
about 1 tbsp oil/margarine to saute onion
2 cloves garlic
1 can diced tomatoes (approx 2 cup size)
2 cups vegetable broth or chicken broth (I use knorr bouillon cubes and water)
2 cups (1 can) kidney beans or other beans
2 cups frozen mixed veggies
Basically saute the onion add everything and simmer at least 30 minutes.
This makes approx 4 bowls of soup you might want to double it.
