One thing we do for lunch sometimes is make a baked potato topped with brocoli and shredded cheese on top, my kids love this.
I also fry sliced potatos with onions as a side dish with dinner.
How about some potato pancakes??
I also chunk up potatos and put them in the crockpot with some pork meat and wax green beans, I use the juice in the can. I usually use 2 cans of wax beans and one can of regular green beans.
Let's see, how about chilli and cheese on top of a potato.
I diced some up and fried them with onions and then diced up some tomatos with it and had them with scrambled eggs for breakfast.
Oh, and also a baked potato with cottage cheese, diced cucumbers and a splash of lemon juice. Awesome taste!
You can also make breakfast burritos with scrambled eggs, crumbled bacon and diced potatos fried with onions.
Oh boy, I'm getting hungry! Hope this helps.
Blessings,

Search for this title here: "I need a recipe for scalloped potatoes". This is a post of mine from a while back. I've tried the recipe with potatoes/lemon pepper/cheese and half/half and it was so good!!! Haven't tried the rest yet...
Love those sales!!

****Oven Fries ***
Scrub Potatoes with peeling on. (this is easy!)
Then cut lengthwise into quarters, or eighths.
Then place about 4 tablespoons oil in a cookie pan.
Sprinkle the Potatoes with seasonings, and toss in the pan to coat potatoes with a little oil.
Bake until crispy, but still tender in a hot oven. |

Peel and slice the pototoes. Fry in oil (1/2 to 1 inch) in frying pan making sure there is room between each potato slice in a single layer so they can cook. When done drain on paper towels. Scramble eggs in a bowl. To a fresh frying pan add some butter so nothing sticks, then pour in the eggs and put in the fried potatoes. Cook like you would scrambled eggs. When done you can sprinkle on cheese if you like, or eat as is.
My mother made this all the time when I was growing up. My dad loved it for dinner! We just have it for breakfast but my kids who would turn their noses up at plain scrambled eggs love it this way. Simple, cheap, and very filling! Add some toast or muffins or biscuits and fruit to round it out if you wish. If you want it for dinner add some chopped ham to the eggs when you add the potatoes.

The Irish make "potato bread" that's more like....well, I don't know what. Basically you mix mashed potatoes with enough flour to make it the consistancy of cookie dough. Then you roll it flat (about 1/4 inch thick), cut it into squares or circles, and fry it in butter or margarine until it's browned. They eat it with fried eggs, sausages and bacon. Not the healthiest of meals! But I can freeze leftover mashed potatoes and use them to make this. Tell your family you're doing ethnic cuisine when you serve it!
