Here's our very favorite roll recipe! I will be making these to take to my Mom's for Thanksgiving next week. These rolls are always popular in whatever form I make them into.
Butter Horns/Pizza Roll/Cinnamon Roll Dough
1 pkg. Yeast (slightly less than 1 tbsp.)
¼ c. warm water
1 c. warm milk
½ c. melted butter (best with real butter)
3 eggs (beaten)
½ c. sugar + 1 tbsp.
½ tsp. Salt
4-4½ c. all purpose flour
Mix yeast with 1 tbsp. Sugar and ¼ cup warm water. Let sit for a couple minutes so yeast can dissolve. Add warm milk, eggs, sugar and butter. Mix well. Add the flour and mix. The dough will be very wet. Cover bowl and let rise for 30-60 minutes.
Divide the dough into thirds. Roll out one third into a circle – fairly thin. You will need to use quite a bit of flour (¼-½ cup) so that it is not too sticky. Use the least amount necessary though as it makes the rolls so much better with less flour. Cut the circle into wedges. I like to use my pizza cutter. You can choose to spread some softened butter on the dough at this time or just leave it as it is and roll the wedges into a crescent shape. You could also make the cinnamon rolls this way instead of the way mentioned below. Just spread the dough with the butter, sugar and cinnamon and then cut the crescent shapes and roll them up.
Bake in a 350° oven for 20 minutes. These rolls are really rich and yummy. You can make larger size crescents by using more dough when you roll it out.
(P.S. I am always asked to make these rolls for special dinners, etc. as they are soooooo good.)
For Pizza Rolls
Follow the above directions. Once the dough is rolled out and cut, putt a little dollup of pizza sauce on each wedge, a little cheese and a couple slices of pepperoni (or whatever else you would like). Roll the wedges into crescents and bake. I like to serve these with a small bowl of warmed up pizza/spaghetti sauce for dipping. These are really yummy!

These are the 2 that I am always 'required' to bring. I also have a great corn casserole recipe and my grandma's chicken and dressing recipe that I can share if anyone is interested.
Cranberry Orange Jello
1 large orange jello (I have used sugar-free and it doesnt change the test)
1 large cranberry jello (or any red kind)
1 small can crushed pineapple, drained
1 can whole-berry cranberry sauce
chopped pecans as desired
small can of oj
make jello using 1/2 of the water that box says. after mixed, add cranberry and stir until somewhat melted. Add can oj, pineapple and pecans. Stir well and pour into mold. Chill until firm like jello.

Sweet Potato Casserole
(this is wonderful - people who normally dont eat sweet pot. love these)
3 large sweet potatoes (boiled & mashed)
1/4 cup brown sugar
2 eggs
1/4 cup butter
1/3 cup milk
1/2 tsp salt
1/2 tsp vanilla
Beat all ingredients together until smooth. Pour into a greased baking dish. Bake at 350 for 15 - 20 minutes. Add topping & bake 10 minutes more.
Topping
1/2 cup corn flakes
1/4 cup melted butter
1/2 cup nuts
1/2 tsp cinnamon
1/3 cup brown sugar

Probably the family favorite side dish we had was Corn Pudding. My mom would make a basic white sauce, put in a bag of corn, top it with a little cheddar cheese, and bake it at 375 for 30 minutes. Then, she would put breadcrumbs on it, and bake it until they were toasted.
No Thanksgiving was ever complete without having Creamed Turkey the next day. On Thanksgiving, my mom would save out half of the turkey drippings, as she was making gravy. The next day, she would heat that up, and use it as a base for white sauce, add some cubed leftover turkey, and serve that over leftover mashed potatoes, and other leftover side dishes.
Of course, I am telling all of this in past tense, but now that we are grown, we still hold to these same traditions, and try to get together as an extended family as often as possible. |

I live near Savannah, GA and one of our regional treats is pecan pralines. I wanted desperately last year to be able to share these with our family who lives in FL (they've never had pralines), but couldn't afford the $13 per-pound price tag. Soooooo.....I found a recipe in a Gooseberry Patch Christmas book and made them myself! I must say that it was the tin full of pralines on the holiday table that was the "hit" instead of the turkey, ham, stuffing, yams, or anything else--including the pies! My mother literally BEGGED me to make them again this year, so it seems we have a new holiday tradition! Unfortunately, I can't have them this year....gestational diabetes is really putting a crimp on my holiday eating! Bummer....

Sorry it took me so long! Here's a few for you. :)

Corn and Broccoli Casserole
1 small frozen pkg. broccoli
1 can creamed corn
4 T melted butter
1 egg - beat and mix in salt and pepper to taste
Seperately melt 1/2 stick of butter and mix with a cup of Peppridge Farm Cornbread stuffing, spread on top
Bake 1/2 hr to 1 hr @ 350
Scalloped Pineapple
1 c. butter
2 c. sugar
4 eggs
1/4 c. milk
4 cup bread cubes (8 slices)
1 #2 1/2 can crushed pineapple w/juice
Cream butter and sugar. Beat eggs and add the milk. Add to the sugar mixture. Fold in bread cubes and add pineapple.
Pour into buttered casserole. Bake @ 325-350 for 1 hour
Pumpkin Dessert
1 can pumpkin
1 can evap. milk
1 1/4 cup brown sugar
2 eggs
1/2 teas. salt
1 teas. vanilla
1 teas. cinnamon
1/2 teas. ginger
1 yellow cake mix
Beat eggs and add all other ingred., except cake mix. Pour into 9X13 greased pan. Sprinkle all of 1 box yellow cake mix, dry, over pumpkin mixture. Melt 1 cup margarine and pour over cake mix. Sprinkle nuts on top. Bake @ 350 40-45 minutes. Serve with Cool Whip or ice cream. Can top with marchino cherry. |
