Need help with a salad recipe for Thanksgiving

We had a really yummy salad the other day but I have no idea where to find the recipe. It was a "lettuce" salad but not any lettuce I recognize. The greens were oval shaped leaves with a tiny bit of stem like they came off a tree. I know that sounds strange but that's the best way I can describe it. It had a vinergrette or sweet and sour dressing with mandarine oranges. I've tried to do a search but none of them sound right. Do any of you know what I'm talking about? I'd really like to bring it for Thanksgiving just to add some spice to a meal that looks like it could be really boring! (Long story - I won't go into it)

That could possibly be a spinich salad, sounds like the description of the leaf. Many spinich salads have mandarin oranges. Robin

I don't have a recipe but I recall having a similar salad a while back. I think it was made with spinach, though. Could that have been the greens you are describing? If so, maybe doing a search for spinach mandarin salad or something similar would get you some recipes that work. Sorry I'm not more help! J_Mom

Here's my spinach salad recipe. Doesn't specifically include mandarin oranges, but since you mentioned it, they would be great with it!

Cook 1/2 lb bacon crisp, crumble.
Hardboil eggs, chop well.
Tear stems off spinach, rinse well, place in bowl.
Add 1 can water chestnuts, 1 can bean sprouts. Top with bacon & eggs.
For vinaigrette, mix 1/2 c dark vinegar, 2 t salt, 1 c vegetable oil, 3/4 c sugar, and 1/3 c ketchup. (The vinaigrette needs mixing very well, before each serving).

Spinach & Mandarin Salad
Prep: 5 min.

1 bunch spinach, washed and torn into pieces
6 ounces mandarin oranges
1/2 cup fat-free poppy seed dressing
2 Tbs. walnuts* (optional), chopped
1/2 cup jicama, peeled and shredded

Put spinach in a serving bowl, add remaining ingredients and mix.
