can pumpkin and evaporated milk on sale-what should I make

I will be making pumkin pie, what else should I make, they where cheap so I bought a lot, but honestly I have never made anything but pie with canned pumkin,

The recipes I have are all copywrited, but you could make pumpkin bread (it's a quick bread, add some chocolate chips because it's really good that way), pumpkin cookies, pumpkin cake, pumpkin rolls (like a jelly roll but with a cream cheese filling, etc. Check for recipes in your cookbooks and on the net.

As for evaporated milk, I always have it on hand. It's great for adding to cream soups instead of milk. Make a cream of potato soup by peeling and cutting up potatoes in cubes. Put them in a pot with enough water to cover. If you have used, say, 4 cups of water then add 4 chicken boullion cubes, 6 cups water gets 6 cubes, etc. Add a chopped onion and boil until potatoes are tender. To this I then add a pound of polish sausage that I have cut lengthwise and then in slices. Let that heat up and add a can or two of evaportated milk, depending on how much soup you are making. Heat that up and then I add instant potato flakes. Add those slowly with time between until the soup is as thick as you like it. I like it thicker than my dh does so I put a small bowl of flakes on the table for those to add to their own bowl if they want it a little thicker. With some rolls, muffins, or cornbread this is one of our favorite meals and so easy to make. Plus you can make it in the crockpot. Just turn it to high when you add the sausage, milk, and potato flakes to heat up faster.

you can bake the pie filling mixture in individual custard cups.... pie without the hassle of a crust and less calories. Serve with whipped cream. Bake along with a roast in the oven and serve warm or cold for dessert.

There is a yummy pumpkin dessert - almost like a cake...


1 (15 ounce) can pumpkin puree
1 (12 fluid ounce) can evaporated milk
3 eggs
1 cup white sugar
4 teaspoons pumpkin pie spice
1 (18.5 ounce) package yellow cake mix
3/4 cup butter, melted
1 1/2 cups chopped walnuts (optional)


1 Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
2 In a large bowl, combine pumpkin, milk, eggs, sugar and spice. Mix well, and pour into a 9x13 inch pan.
3 Sprinkle dry cake mix over the top, then drizzle with melted butter. Top with walnuts.
4 Bake at 350 degrees F (175 degrees C) for 1 hour or until a knife inserted near the center comes out clean.


Makes 24 servings
