I feel dumb... question about freezing foods

Hi,
I need some wisdom from those of you who know your way around the kitchen. Tonight, I made chicken enchiladas (they were really good). The only can of enchilada sauce that I could find at the store was a HUGE one. Now, I have about half the can leftover. Can I freeze this sauce? If so, how? (In a freezer bag?) and for how long? I am not planning to make enchiladas again for another month, but I hate to throw away money by throwing out what I did not use. Also... if I can freeze it, how do I thaw it out once I need to use it? Just put in fridge? I feel like these are such basic questions, but I was never taught the basics of cooking, etc., and am so thankful for this board!!

Yes, just throw it in a freezer bag! If you have a deep freezer you can leave it for quite a long time, as long as it doesn't have frost on it its OK, and even sometimes when it does have frost on it! It will be fine in your fridge freezer for a month if thats where its going. When you thaw you can either just leave it in the fridge, or let it sit for awhile in warm water. In a hurry I'll warm it in water until I can get it out of the bag, then finish heating in the microwave. |

Do you have any small tupperware type containers, you could freeze the sauce in one of those and can defrost it in the microwave. You can also freeze them in freezer bags (but when you put the bags in the frezzer make sure you put the bag on a solid surface, I laid my bag of sauce on a self and the bag wraped around and froze on the wire shelfs--lol I had to take the shelf out to defrost it--lol)
They have frezzer bags that you can boil (check the label becasue not all can be boiled) and you can cook the sauce that way.
Also you can place the bag of sauce in a bowl of water for a few minutes and it will defrost.
And I have been able to just unwrap the bag from the frozzen sauce and it was just like an ice cube, I put it in my pan and cooked it.

Yes you have got it right, I freeze alot of things. Like you said sometimes they come big, or its a better buy to buy it and freeze it.
I use freezer bags when its not going to be too long till I use it. (a month or6 weeks) also I have a food saver vacuum to bag things for long term. ~K |
