If you do a search for "apple pie" here on the cooking board, you will find several recipes. If none of them work for you, just let me know (post or e-mail) and I'll give you my recipe that we love.
One of the important things is what kind of apples you use. DO NOT USE RED DELICIOUS!!!!!!!!!! The apples do not hold up during cooking; the consistency is not very good. Most other apples will be good, such as Granny Smith (which is quite tart, so you can use half and half with a different kind, otherwise the added sugar will also do), Golden delicious, Gala, Braeburn etc. You can mix several kinds. Personally I think the apples shouldn't be too sweet, because of the sugar that most recipes call for. It can easily get too sweet (I LOVE sweets, but I love some taste to my sweet desserts as well!!!). If you use apples that are at least somewhat tart, there seems to be more flavor when you bite into the pieces of apple.

I would love to have your recipe,if you have time to share! My girls love to try several recipes for a particular item at once, then we rate it as a family, and they keep their favorite for their own cookbooks!

I'll be happy to share, Lamb and Janet! I've tried different recipes, and this is the one we like the best:
Irresistible Apple Pie
Filling and Glace:
6 c sliced and peeled apples (about 2 Lbs or 6 medium)
2 Tbsp orange juice
1/3 c firmly packed light brown sugar
1/3 c granulated sugar
3 Tbsp all-purpose flour
1 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg
2 Tbsp butter or margarine
1-2 tsp milk
1 tsp granulated sugar
Toss apples and orange juice in large bowl.
Combine light brown sugar, granulated suger, flour, cinnamon, salt and nutmeg. Toss with apples until coated.
Spoon into unbaked pie shell. Dot with butter or margarine. Moisten edge of pastry with water.
Use a top crust or a crumble crust. If using a top crust: Brush top with milk. Sprinkle with sugar. Cover top with sheet of foil to prevent over browning.
Bake at 400 degrees for 40 min. Remove foil. Bake 10-20 minutes longer or until apples are tender, filling in center is bubbly and crust is golden brown.

I asked for a crumb crust recipe earlier, and OnHisPath gave me this recipe. I'll quote her:
"My MIL JUST gave me this recipe this weekend, and it is SUPERB and EASY! Use 1 c. flour, 1 c. sugar, and 1 stick butter. Mix the flour and sugar and cut in the softened butter. Spread on top. She did on top of 5 apples, peeled, cored, and sliced with 1 c. water. Then put in the oven at 350 degrees for 30-45 minutes. I would use more like 3/4 c. water. We are all in love with this new recipe!"
I tried her crumb crust recipe and really liked it! Nice and crunchy, and easy too!
Here's my recipe for a regular crust for a 9 inch pie, enough for both top and bottom crust:
2 1/2 c flour
1 1/4 tsp salt
1 Tbsp sugar if dessert pie, otherwise 1 1/4 tsp for chicken pot pie
1 c butter or crisco
Ice water
Combine flour, salt and sugar in medium bowl. Cut in butter or crisco using pastry blender or 2 knives until all flour is just blended in to form pea-size chunks. (Or you can freeze butter or crisco ahead of time and shredd it with an electric shredder)
Sprinkle with water, one tablespoon at a time until it just holds together. Toss lightly with fork or spatula until dough forms a ball. Divide dough into two equal parts. Press between hands to form two 6 inch "pancakes".
Flour "pancakes" lightly on both sides. Roll bottom crust between sheets of waxed paper (or plastic wrap) on dampened countertop.
Peel off top sheet. Trim one inch larger than upside-down 9-inch pie plate. Flip into pie plate. Remove other sheet. Trim edge even with pie plate.
Roll top crust same as bottom. Peel off top sheet. Flip onto filled pie.
Remove other sheet. Trim 1/2 inch beyond edge of pie plate. Fold top edge under bottom crust. Flute. Cut slits in top crust for escape of steam.

my favorite thing is apple dump-it cake...kinda easy for pie, but you all may love it.
2 cans apple pie filling
1 box yellow cake mix
1 stick of butter (varies)
dump the pie filling into a greased dish. dump the cake mix on top. melt the butter, and pour over the cake mix, making sure all the mix is wet. bake at 350 until golden brown. :)
you can do this with any pie mix.
