Canned Salmon

How do you cook canned salmon? Can it be cooked in the oven?

You can use it like canned tuna. You can make a spread out of it with mayo or put it into a casserole. You can also mix it with breading and fry it up like a crabcake. Try a websearch for "Salmon Patties" and it should bring up several recipes. The bones are edible, by the way, so you don't have to pick them all out. They're a great source of calcium!

To me it is much like canned tuna and we've done things that you would do with the tuna. Annette |

Well for canned salmon I make salmon patties.
1 can of salmon, drained
1 egg
1/4 cup milk
chopped onion
spices to taste
bread or cracker crumbs to absorb, like meatloaf
I then mix all the above, fry in a light oil until almost crispy and serve like hamburgers. |

Here's my recipe for Salmonburgers. Even the kids like them!
1 15/1/2 oz can Alaska Salmon
3/4 C uncooked quick oats
1/2 C finely chopped onion
2 eggs, slightly beaten
2 T minced parsley
2 T lemon juice
1 T Worcestershire sauce
2 T oil
Drain and flake salmon. Combine salmon, oats, onion, egg, parsley, lemon juice and W. Sauce; Mix well. Shape mixture into 4 patties. Pan-fry on both sides in hot oil until golden brown. Serve patties on buns with lettuce and tomatoes, or as a main dish with potatoes, etc. Serves 4. |

Here is my variation of Salmon Patties -- it's very simple and good! I use boneless skinless salmon in the can.
1 can salmon (small can)
1 egg
1 tsp. lemon juice
dashes garlic powder
Mix ingredients in a bowl. I use a pampered chef medium scoop to make small patties and cook on a griddle. These are very good served with garlic cheese grits! Both my husband and children love them. |

We enjoy a broccoli salmon bake casserole: I boil 1lb of noodles - elbow, rotini, anything small works well - strain and put into bottom of a glass 13x9 baking dish. I sprinkle a bag of frozen broccoli over the top of it, then spread 1-2 cans of salmon (broken up well) over the top of that. Make a quick cream sauce on the stovetop:
4T melted butter
4T flour
salt and pepper to taste
mix well, then slowly add 2 1/2 cups milk; stir till thickened
Pour over top of casserole. Cover with bread crumbs or crushed crackers and sprinkle with parmesan cheese.
Bake at 425 for 25 minutes.

ok I m sorry but I just gotta say EWWWWWWW!!!!! Fish. I have a funny story about eating fish. I cannot eat fish at all. I try but it seems to just get stuck and cant go any further. One time when we were in Haiti visiting our children that we were adopting I was served fish at the Ministry house. I thought I was gonna croak...it still had its head attached. Its eyes were looking at me. The wife of the pastor who ran the orphanage that our children were in rescued me. She took the fish and I was able to peacably eat my root soup. I know Im a wimp!
