Here's the one I use. I've had to work the kids up to it - I started out with few veggies then each time added more. I'm always on a quest to figure out how to hide veggies in our food :-)

Bean Soup

3 cups mixed dried beans and peas
1 ham hock (optional)
lots of tomatoes, diced (I take skins off first)
1-2 heads Napa cabbage, shredded
3-5 carrots, diced
3 onions, diced
2 peppers, diced
4-6 cloves garlic, diced
4-6 potatoes, cut in chunks
3 celery stems, diced
3 tbsp. chili powder
1 tsp. sage
water to cover
salt to taste

Soak the beans and peas overnight. Drain the water. Place in slow cooker (the *large* size). Add remaining ingredients and water to cover. Cook on high 7-8 hours, checking water level occasionally, adding more if needed. I'm sure you could do this in a large pot on top of the stove, I just happen to like the slow-cooker method. If using ham hock, separate the meat from the bone before serving and throw away the bone. The recipe is very forgiving (add or subtract ingredients as you like), as long as you allow enough time to cook the beans and peas till they're soft.

Actually, all of the "diced" veggies are pretty close to "pureed" by the time I finish them in the food processor :-)

This is one my kids really like.

Cook 2 cups pinto beans.
(Soak then cook )
Remove some of the water after they have cooked. You can always add more later.
1/4 cup fine chopped onion I like red ones
1 red bell pepper fine chopped
! cup carrots chopped
4 celery stalks chopped
1 med. potato
1 can (oe fresh) chopped tomatoe
1 bunch cilantro chopped
salt pepper to taste
1/2 teas.garlic powder
1/2 teas cumin ( to taste)
1/2 teas. chili powder



Cook until vegets are soft on low. Add water or broth for desired consistancy. Sometimes I saute the onion and bell pepper. I don't spice it too much, but the kids eat it. Top with cheese!

Mine's alittle different:

1 large jar of Northern beans
2-4 cups diced ham or turkey ham
2 pkgs dry onion soup mix
1 pkg frozen sliced carrots
2-4 cups diced potatoes (or can use diced frozen hashbrowns)

Put 4-6 cups of hot water in crock-pot. Add packets of dry soup mix and stir. Dump the rest of the ingredients in crock-pot. Cook on high for 4 hours. Enjoy!

Hey, Lora....I'd like to meet with y'all again, too. It seems every time I've gone to Houston there just isn't time. I do think about y'all most every time, though!
