Homemade Soups and Beans and Rice

I have noticed in some current and past threads on saving money that many of the meal recommendations were soups and beans and rice...Thankfully we love both..Unfortunately I have no idea how to make either. Would any of you be willing to give step by step recipes for say a chicken noodle soup and beans and rice? Also, I have never bought anything but chicken breasts (boneless, skinless) and in the interest of saving money would like to purchase cheaper cuts, but again I don't know how to fix them to then go in the soup. My mom is my best friend but she worked full time growing up and was not able to "teach" me much in the way of cooking, so I am trying to learn a little at a time. Thanks in advance for any help!!!

Chicken Noodle Soup
Bake a whole chicken in the oven for dinner one night at 350 for 20 minutes per pound. Take off any chicken that is left and save it for your soup. Take the whole carcass and put it into a large stockpot. Cover with water and bring to boil. You can add all kinds of seasonings at this point. We like onions, carrots, celery, garlic, pepper. Don't add too much of the veggies because you won't be eating them. Let boil for a few minutes and then turn to simmer. You want the liquid to reduce until it is half way. The longer you simmer the stronger your stock. When that is done, drain through a sieve to get only the broth. Discard everything else.
Put the broth into a pan for soup. Bring to boil and add egg noodles, any veggies you want and seasonings. At this point I only add pepper and garlic powder. You can add any veggies you want as well. Cook until the noodles and any veggies are done. YUMMY!
Beans and Rice
Once you know how to cook both of these individually you can make all sorts of different recipes.
For Brown Rice...
Put one cup of brown rice and 2 1/2 cups of water. Bring to a boil and then cover and turn down the heat to medium. Cook for about 40 minutes.
For Beans.....
There are many varieties and you will want to experiment with them to see which ones your family likes.
Rinse a pound of dried beans and put into crockpot and cover with enough water so that it is about 1 1/2 inches over the beans. Let cook in crockpot overnight. I personally do not like the smell of beans so I do them overnight. In the morning your beans will be all cooked and ready for any recipe.

We lived in South Louisiana for 14 years and many cajun foods came about because the people we living off of the land and what they could easily get. Many cajun recipes are quite inexpensive, there's always lots of rice to stretch the meal. This is my recipe for Red Beans and rice. I will tell you that I never soak my beans, I start with them dry but rinsed. To avoid the gas problem with beans, add 1 teaspoon of baking soda for each pound of beans. Do this when they are bubbling really well. A word of warning about that.... the top of your food will begin to look like a volcano (you know, the kind you used to make with vinegar and baking soda). Just stir the foam into the beans until it diminishes. I never put more than a teaspoon in at a time because it will run over the sides of your pot. I will post a couple more of my recipes, it seperate posts so that I don't run over the wording.

Red Beans & Rice
2 lbs red kidney beans
1 lb smoked sausage 1 T. Worcesteshire
1 lg. chopped onions 1 tsp red pepper
1 bunch green onions 1 tsp black pepper
1 cup parsley chopped 2 tsp Louisiana Hot sauce ***
1 clove garlic 1-8 oz can tomato sauce
1/4 tsp oregano
1 T. salt
Slice and brown sausage. Then put everything in pot and bring to a boil. Reduce heat
and cook for several hours until beans are tender. Serve over rice. Feeds an army!
Freezes well. For white beans, you can substitute Great Northern Beans for the red
beans, and omit the tomato sauce.
***If you use Tabasco sauce reduce the amount unless you like it spicy***

Hayride Bean Soup
2 lbs Great Northern Beans
1 lb smoked sausage
1 med onion
3 stalks celery, chopped
1 bunch green onions
1/4 c dried parsley
1 clove garlic
1 tsp salt
1/2 tsp black pepper
1 can of pinto beans
1 can pinto beans with Jalepenos
3 Tbls oil
Saute onions and garlic in oil. Rinse and sort beans. Combine all ingredients, except
canned beans, in pot and cover with water. Bring to a boil and reduce heat. Cook for 4
hours ading water as necessary. Mash canned beans and stir into soup in the last 15 min
of cooking. Serve with cornbread. Freezes well.

Jambalaya isn't a soup, but it is a very inexpensive cajun dish.
Here are the ingredients:
1/2 cup oil
3 cups chopped onions
1 cup chopped bell pepper
3 tea. salt
1 1/4 tea. cayenne
1 lb smoked sausage
1 1/2 lbs chicken, de boned and cut into cubes
3 cups rice
6 cups water
Heat the oil and add the onions, bell peppers, 2 tsps of salt and 1 tsp. of cayenne. Stirring often brown for about 20 minutes or until they are carmelized and dark brown in color. Scrape the bottom and sides of pot to loosen any browned particles. Add the sausage and cook stirring ofen for 10-15 min, scraping pot again.
Season the chicken with the reamining salt and cayenne. Add to pot and brown for 8-10 min, scraping pot as before.
Add the rice and stir for 2-3 minutes to coat. Add water, stir and cover. Cook over med heat for 30-35 min without stirring. When finished let stand for 2-3 min

Here is our Gumbo recipe, it's like a soup. It's really quite easy, if there are any questions, let me know.

Chicken and Sausage Gumbo
1 cup oil
1 cup flour
3 bell peppers
1/2 cup celery
1 onion
1/2 cup chopped green onions(opt.)
1 1/2 tsp. salt
1 1/2 tsp. gumbo filé
1/2-1 lb. sausage
1 whole chicken
1 T. worchestershire sauce
1 t. Louisiana hot sauce
1 T. Tony Chachere’s
7-8 cups water
Kitchen Bouquet as needed
Boil and debone chicken. Chop bell peppers and onions and green onions, and slice sausage. Make roux. Add chopped vegetables, cook til soft. Add water, Tony’s, filé, salt, wor. sauce and hot sauce. Simmer for around 20 minutes, then add chicken. Cook til hot. Serve over rice

If you'd like red beans & rice, here's a basic recipe that you can play with...
1 bag red beans (soaked overnight, or boiled for 2 minutes & left covered in pot for 2 hours)
tomato paste, tomato sauce, crushed tomatoes, beef broth/bullion (use any combination of these to make a broth to cover the rest of the ingredients about 1/2" deep)
garlic, pepper, salt, cayenne pepper, tobasco to taste (if you omit the "heat" it can be bland...you may want to make it bland and then serve with tobasco on the side)
finely chopped onions
chopped ham, smoked sausage, or hamburger
Put all this in the crockpot and cook all day on low (or overnight). Make sure the beans are tender. The liquid will thicken as it cooks--add more if you want it soupier. Serve over hot rice. OR, for "fancy", put the red beans in a bowl and scoop an ice cream scoop of rice on top of the beans. You can also put grated cheese on top.
This is fun to play with--you can have it every week, and vary it so no one gets bored. It also freezes well.

How about the way we in Brazil eat beans and rice? I cook the beans in a pressure cooker with plenty of salt and a clove of garlic. In seperate pan pour a little oil, chopped up onion and chopped or mashed garlic, saute and then add beans (but don't pour all of the water in). Allow to simmer. Delicious!! We like a little lime squeezed on top of our beans and rice, MMMMM my mouth is watering just thinking about it! It really is good, we eat it everyday for lunch!

here's my recipe for Irish stew. In a crockpot (or double boiler) put one medium sized can of chopped tomatoes and one envelope onion soup mix. Put in 1/2 pound to 1 pound beef chopped into pieces (lamb is more traditional, but also more expensive!). Add one chopped onion, one or two chopped carrots, a couple chopped potatoes and any other root vegetables you like (turnips, for example). Pour in enough water to cover everything by about an inch. Then turn on the crockpot and cook for several hours, or simmer on the stove for a couple hours. Make sure there's enough water as cooking progresses...you may need to add more.
I like to chop up all the veggies and meat early in the week and freeze them. Then I can just dump it all in the crockpot with the canned tomatoes and onion soup mix and let it cook.
