Homemade Pancakes that tast like a mix????

I love the taste of pancakes made from a box mix (Aunt Jemima, Hungry Jack, etc...). When I make homemade pancakes they taste nothing like this, way to thin and more bland. Does anyone have a good recipe that tastes more like store bought?

I used the Pancake Mix recipe in More With Less for years and really enjoyed it. You could make 4 pounds at a time so you could always have it on hand. We use a whole wheat one now. Annette |

This recipe comes from The Bread Beckers Collection of Recipes which is not copyrighted. The one thing I do miss is not being able to have the dry mix already made up ahead of time. Having learned that wheat loses it's nutritional value just a few days after being milled I've switched to this one and it's yummy.
3 cups freshly milled flour
1 tsp salt
1 tsp baking soda
2 1/2 tsp baking powder
1/3 cup oil
4 eggs
3 - 4 cups buttermilk (I use whole milk)
Mix together dry ingredients and add liquids.

Thanks so much, Annette. Not having a mix available ahead of time will just encourage me to make cooked pancakes in mass and freeze! And, that ends up being even faster so this recipe is perfect for us.

My recipe is the same for Annette's, except I use regular flour and add 8 oz. sour cream. |
