Please! I would like to make the Rice Pilaf with brown rice.
Can you make Chicken Quesadillas healthy and low fat/low cal?

Chicken Quesadillas
Cut up boneless chicken breast into strips. Marinate them in teriyaki sauce (1/2 cup brown sugar (I use sucanat), 1/2 cup soy sauce, powdered ginger and powdered garlic that has been all mixed together and cooked on stove until sugar is dissolved).
Cook the chicken on the stove.
In a dry hot pan place a large flour tortilla. Put chicken on half of the tortilla and then sprinkle with monterey jack cheese. Fold the tortilla over OR place another tortilla on top and flip. Only takes a minute or so to melt the cheese.
I imagine you could use low fat cheese though I've never tried that.
The Chicken and Rice Pilaf is adapted from the Once A Month Cookbook.
I'm terrible when it comes to measuring but I'll give it a try for you. Do know that this mixture looks really kind of nasty until it is baked.
In a large baking dish put 1 1/2 cups water or chicken broth, 1 cup brown rice, 1 1/2 cups creamed soup (I make a white sauce as a substitute from the More With Less Cookbook), 1 tsp beef bouillon, 2 Tbsp dried onions. Mix that all up in the baking dish. Put chicken (I've used boneless breast, leg quarters, etc. ) right on top of the mixture. Bake at 350 - 375 for about an hour or until chicken is done. You can sprinkle some paprika on for color before baking.
