My girls love muffins (esp blueberry) and I figure it is a good way to get real fruit into my oldest who won't eat fruit/veggies. I've been buying store mixes which of course have arti. blueberries. I want to make my own so they will be healthier as well as making a larger quanity.
So my question, do I need to cut up the blueberries or do I put them in whole? I thinking I should cut them up; am I correct? Thanks so much!

I put them in whole! If you use frozen, put them in the batter frozen...don't thaw them first.
For my crew....it took some getting used to having the real thing. Funny, we get so used to those small, colored chemicals and think they are good.
Now...my guys asked for my muffins!! They are also good if you use frozen peaches....those I do cut into small pieces first.

If you cut them they will probably be more prone to "dye" the batter blue-grey! Even without cutting them they do this, if they are stirred too much or left to sit at all in the batter. What I am wondering is if they should be put in frozen so the batter stays a nicer color? |

Put them in whole. Do know that most blueberry muffin mixes have dehydrated blueberries in them. Annette |

Put them in whole and here is the trick to keep the batter from turning purple: mix the batter (always gently) and add the bluebarries last. Do not mix them in, but FOLD them in. To do this you use a spatula. A cook book should have a picture of folding. It is more gentle to the batter. Muffin batter must be treated gently and not over beaten or you will get tough muffins.

This link might've been posted here before. My apologies if so, but I wanted to make sure that you saw this. We love this muffin recipe and I'm usually able to find something in my cabinets for one of the variations. My husband loves fresh fruit, so I am able to make these for him to take to work.
