Need ideas for what to serve at a luncheon

My husband is a roofing/insulation contractor. He is doing a presentation for for the churches in the area and I'm in charge of the lunch. Do you ladies have any good ideas? It will be during lent so anything with pork is out. I would love to get a few vegetarian ideas, too! Thanks! |

Lasagnas could be good - can be made in large foil pans, and in different varieties, including vegetarian. Serve with a tossed salad and bread. |

Those both sound easy enough! Any more ideas? My husband has been doing more of these sort of things so I can always use more ideas if anyone thinks of anything. I'll probably get a chance to use them! Thanks so much!! I was in brain freeze mode on the whole thing!! |

What about soup or chili?? You could easily make either of these "vegetarian" as well as not. Serve with veggies and dip and cornbread!! Yummy!

Another idea might be shredded beef sandwiches on hoagie buns. Serve with veggies and dip again or chips. Or perhaps potato salad or pasta salad.

Hi Laura:
You could also have several crockpots going warming some Asian type toppings with a large bowl of hot rice. - Like Hawaiian Chicken, Beef stir fry, stir fried veggies, etc. You can purchase some egg rolls or other items to go along with this, a fruit salad, etc.
You could also serve *brisket* with salsa, barbecue sauce, chips, rice and a salad. You know my Texas heart.
I have had friends make a chicken roll up recipe where chicken breast is pounded flat, stuffed, rolled up and put a topping on it. This is mass produced, so your kids could help you assemble it, and then refrigerate until it is ready to be baked. A fru-fru salad to serve is using the bag salads that have the yummy variety of greens. Then add dried cranberries, chopped pecans, chunky baguette croutons to the mix. Add the yummy Vidalia creamy salad dressing sold at Walmart and toss. It's a simple, but really different, yummy salad.

What about the ever-so-popular meat and cheese deli tray along with some pasta and/or jello salads, chips, veggies and dip, and a simple cake or brownies for dessert. |

My favorite is a BIG pot of veggie beef soup, a couple different kinds of muffins/quick breads, crackers and cheese, and whole wheat bread and butter. Can easily be made ahead and is always a hit. |

Thank you ladies for all the lovely ideas! I served on Thursday and it went well! I did lasagna, garlic bread, salad, and a desert. Everyone thought it was great!
I'm going to print off these wonderful ideas. Some were new to me so I'll have a year to try them out and practice on my family!
