overnight cinnamon buns

I'm wondering if anyone has prepared cinnamon buns one day and cooked them the next morning. How exactly does it work? Do you put them in the fridge? The reason I'm asking is that I want to send some fresh cinnamon buns to work with DH on Friday morning. The only difficulty is that he leaves for work at 7:10 and there's just not enough time to roll them out, have them rise, and then bake them.

I have done this and it works. After you put buns in pan loosly wrap with plastic wrap. It will rise in the frig. over night. If I have time, I get them out 30 min. to get to room temp. before baking. If they are still cold make sure the pan you use can go from cold to oven. HTH

I do this very regularly!
Get them all assembled and in the pan and cover loosely with plastic wrap.
In the morning first thing I take the pan out of the fridge and turn the oven on and place the pan ontop of the stove where the oven vents it's heat and I tent a tea towel over the vent and the buns. It warms them nicely to room temp that way and gives them a bit more of a rise. Bake as normal.

Hot cin. buns are ALWAYS a huge hit!

Thanks for the tips. I did it and it worked out really well. DH's coworkers were impressed and wondered what time I got up. DH told them about the overnight thing so no one thinks of me more highly than they ought. I'll do it again and it's cheaper than buying 60 Timbits (donut holes).

Yes, please share, I have trouble with the icing. it always taste like powdered sugar and milk and vanilla no matter what I do. Anyone do any with cream chesse icing, or have a better idea?I'd love to do this Saturday/Sunday morning~K

Mine is in a book, so I can't post. You could search the web, any sweet bread recipe or Cinn. roll should work.

I just used a sweet bun recipe. I put butter in the bottom of the pan and I also covered the pan with brown sugar. If you use too much brown sugar: butter, it will be a very hard topping. I didn't ice them either. Hope this helps

I found this recipe last month, and we all LOVE it!
1 pkg.rapid rise yeast
4 tbs. sugar
1/2 tsp. salt
3 3/4 c plain flour
1 c boiling water
1/2 c butter
2 eggs, beaten
Combine yeast, sugar, salt, and 2 cups of flour. Place butter in boiling water until melted. Cool to 120-130. Add water mixture and eggs into flour. Stir in remaining flour, knead for 3 minutes. Allow dough to rest for 10 minutes. Punch down. Roll into a rectangle. Spread filling on . Roll up. Cut into slices and place on greased 9 x 13 pan. Allow to rise 20 minutes. Put in preheated oven at 350 for 15-20 minutes. Pour on icing when they come out.
Filling:
1 stick butter
1/3 c sugar
1/3 c brown sugar
4 tsp. cinnamon
4 tbs. flour
Melt butter and add other ingredients. It will be pasty.
Icing:
2 c powdered sugar
2 tbs. milk

Here is the recipe I use when making cinnamon rolls - this dough is very good!

Butter Horns/Pizza Roll/Cinnamon Roll Dough

1 pkg. Yeast (slightly less than 1 tbsp.)
¼ c. warm water
1 c. warm milk
½ c. melted butter (best with real butter)
3 eggs (beaten)
½ c. sugar + 1 tbsp.
½ tsp. Salt
4-4½ c. all purpose flour

Mix yeast with 1 tbsp. Sugar and ¼ cup warm water. Let sit for a couple minutes so yeast can dissolve. Add warm milk, eggs, sugar and butter. Mix well. Add the flour and mix. The dough will be very wet. Cover bowl and let rise for 30-60 minutes.

Divide the dough into thirds. Roll out one third into a circle – fairly thin. You will need to use quite a bit of flour (¼-½ cup) so that it is not too sticky. Use the least amount necessary though as it makes the rolls so much better with less flour. Cut the circle into wedges. I like to use my pizza cutter. You can choose to spread some softened butter on the dough at this time or just leave it as it is and roll the wedges into a crescent shape.

Bake in a 350° oven for 20 min.

For Pizza Rolls

Follow the above directions. Once the dough is rolled out and cut, putt a little dollup of pizza sauce on each wedge, a little cheese and a couple slices of pepperoni (or whatever else you would like). Roll the wedges into crescents and bake. I like to serve these with a small bowl of warmed up pizza/spaghetti sauce for dipping. These are really yummy!

For Cinnamon Rolls

Divide dough in half. Roll out into a rectangle. You will need to use quite a bit of flour at this point while rolling out. Probably about ¼-½ cup. Spread soft butter over the dough then sprinkle with white or brown sugar and cinnamon. Roll up the long way and slice about one inch slices. Place the slices in a greased pan. Cover the pan and let rise 30-60 minutes. Bake for 15-20 minutes at 350°. I am not positive on the time because it has been a long time since I made the cinnamon rolls and I made this up from another recipe. This dough is absolutely delicious though. Glaze the warm rolls with a mix of powdered sugar, milk and vanilla or your favorite frosting/glaze.
