Now that I got some great tips on Momsboard on how to get the pizza crust to bake properly, I need a better recipe for the fill. I like my home made pizza, but we all like the restaurant ones better... I'm thinking it would be an idea to get a better brand of pizza sauce (or from scratch) and also idea's on the toppings you seem to enjoy. I'm trying to include more veggies but the kids aren't used to the typical pizza veggies. So I'm not sure what to do. Maybe chop them up real fine? What have you used and been able to get your kids to like? Do you use only Mozarella or a cheese blend?

I have a great no-cook sauce:

2 6oz cans tomato paste
2 cups water
2/3 cups olive oil
2-3 cloves garlic, crushed
1 Tbsp. basil, oregano and rosemary (1 tbsp. EACH)
pinch sugar
salt, pepper to taste

Mix paste, water and oil. Add spices and let stand at least 3 hours. No cooking required. You can adjust the seasonings if you want, add more sugar if you like a sweeter sauce. I also sprinkle parmesan cheese on the sauce after spreading it on the pizza, then I add mozzarella and toppings.

When you first mix this up, it looks yucky :) Don't worry, it's delicious after it sits awhile. If you don't like the texture of dried rosemary, you can grind it up in a coffee grinder first.

Having a good crust is a big deal. My five kids have grown to love a garlic whole wheat one. We go pretty light on the sauce which is 1 small can tomato sauce; 1 small can tomato paste; 1 tsp. each of salt, dried oregano, and dried basil, 1 T. each of sugar and dried parsley, 1-2 cloves crushed garlic; and 1/4 tsp. black pepper. This is plenty for two large pizzas and freezes well. My meat lovers' love one or all of the following: browned and crumbled Italian sausage, ham, and pepperoni. The only veggies I get away with are mushrooms, olives, and very thinly sliced bell peppers. (My family does better with raw veggies or a side salad.) I use just shredded mozzarella, but put it on half-way through the baking; with a little sprinkle of dried Italian seasoning. Can you tell I love making pizza too? This is one of the most requested meals at our house. Enjoy!

At our house, we like to use plain bagels for little homemade pizzas. Its quick and easy, and tastes great. If you prefer a very thin crust, you can use flour tortillas instead.

There is a post on Pizza toppings that might help. Most restaraunts use a blend of cheese which include mozzarella, cheddar, monterey and parmesan. That might do the trick as well. Having a good crust recipe is an excellent start. Annette
