Black Bean Burrito Recipie?

Any good suggestions for a burrito filled with black beans, veggies, sour cream, etc.?

Okay, it's not a real recipe, but it works for us. Mix up cooked black beans (canned or dried that you cook yourself), some cooked rice, some Monterey Jack cheese (or jalapeno jack if you are feeling a bit adventurous), some chopped onion and/or garlic (optional), some sour cream or (my favorite) ranch dressing, and leftover cooked chicken or turkey. Warm it all up and wrap in a burrito. Pretty much a full meal. Maybe throw some fruit on the plate to round it out. Put salsa on the table for dh. Great way to use leftovers and you can go heavy on the rice and light on the chicken to save a few cents.

Here's what I do:
Cook black beans in the crockpot with garlic about 8 hours. Then I saute` some onion and add the beans plus some of their liquid. I usually add cumin, cilantro, salt,and I have added pureed jalpenos, but I pulled some beans out for the littles first (too spicy for them). Then I mash them until desired consistency in the skillet. We serve them on homemade ww tortillas (I've used corn too), with sour cream or plain yogurt, cheese, shredded lettuce, tomatoes, black olives and salsa.

Quite some time ago someone posted a wonderful recipe with black beans, ground beef, rice and tomatoes (and other stuff)cooked in the crockpot. We tried it and it was great. You could probably do a search and find it. I don't recall who shared it.

I just mix black beans with brown rice and salsa...put them in whole wheat tortillas with lots of shredded cheese. And then I bake at 350 until crispy. And serve with sour cream. Its too easy and so yummy. I was going to bake them this week..but my brilliant pregnant brain forgot the tortillas~!!!!!
