When do eggs go bad?

With my bulk order I ordered a box of eggs 8dz. They have a sell by date of March 5th. When will they go bad then?How long do they last pastthe sell by date?

I can't answer your question but I can tell you that a fresh egg, when cracked on to a plate, looks visually different than an "old" egg. A fresh egg will have a fuller, thicker yolk and a thicker albumen. The old egg will have a flatter, thinner yolk and a thinner albumen. Over time moisture will leave the yolk as the egg shell is porous. That's why you need to keep eggs away from strong smelling food in the fridge, as the egg will pick up flavors from other foods.

Now, I'd like to recommend a recipe that uses up a lot of egg. It is a family favorite. We are a family of 6 and so I need to make two of these to feed us. It is extremely simple and quick and I like it for a fast dinner with applesauce on the side. If you double it, make each batch separately unless you have a very large sized blender. (Don't ask how I know this!!)

German Pancake

6 eggs
1 cup milk
1 cup flour
1/2t. salt
1 - 2 T. butter, melted


Put all of these ingredients in a blender and process until smooth.


Pour into a greased 13 x 9 casserole dish. (It seems to work best if you stay with this size.)
Bake uncovered 400 degrees for 20 minutes.


While it is baking, this is the syrup that we like for this.

Buttermilk Syrup

3/4c. buttermilk (or 3/4c. milk and 1 T. vinegar and wait for 5 minutes)
1 1/2c. sugar
1 stick of butter
2 T. corn syrup
1 t. baking soda

2 t. vanilla

Bring to a boil and boil for 7 minutes. (Use a timer for this step as the time is important). Remove from heat and add the vanilla
Serve.


This syrup is so delicious. My son made up many batches of it for Christmas gifts and everyone raved about it.

You can do the float test to see if an egg is still good. Eggs that float are bad (gases build up in the shell as the egg starts to decay). Just put the egg or eggs in a big bowl of water, any that float should be chucked, it stands up it is already going bad and should be chucked. If the egg just sits on the bottom it is good to be used. I always check my eggs before cooking them.

I was told that if eggs are left in the carton in the coldest part of your fridge, then they should be good for at least 2 weeks past the "sell by" date.
