Need recipe for jams made with fruit juice or sugar free.

We picked 50lbs of strawberries this morning. We are going to put some up frozen but would like to make jam with some. We have bought jam at the store that is made with apple juice or pear juice as the sweetener. Does anyone have a recipe for jam made without sugar? We don't use artificial sweeteners.

In Surejel boxes they have a sheet full of instructions and recipes. I'm almost certain that there are sugar free recipes in their as well. Annette |

My uncle always made strawberry jam by ONLY boiling down the strawberries, no sugar, no NOTHING! LOL! You just keep simmering them down on low until it's really thick. You need to freeze this though, you can't can it I don't think. I remember it being the BEST jam EVER!!

I have a friend who made strawberry jam that was so good by taking frozen strawberries and dried pineapple and she let the strawberries sit on the pineapple overnight and then int he morning blended it up. It was so good! It doesn't last long though!
Another thing to use is Pomona's pectin as you can use any sweetener you want with it, it costs more, but is at health food stores and coop's |

Also if you get the book Sweet and sugarfree there are many jam recipes in there without sugar |
