instant versus regular pudding...

I know how to make pudding from scratch and have the box mixes available for cooking, but there are no "instant" mixes available here in Peru. I have several recipes (including the Maxwell's coffee cake) that use instant pudding. Does anyone know how to doctor a recipe that calls for the instant so it is still usable?

I have been looking for a "make your own instant pudding mix" recipe but haven't been able to find one. What I did that worked sort of OK was to put into my recipe, instead of the instant pudding mix it called for, all the dry ingredients of a regular pudding recipe. So I think I was putting in sugar, corn starch, vanilla...oh dear, I can't remember, and now I have written it into my new invented recipe. But anyway, maybe you could try that with your regular pudding recipe. It turned out a little different, but not objectionable (in my opinion :-) ) I wonder what is in instant pudding that makes it do like it does--is it some strange chemical? I'll have to read a box next time at the store!
