We're actually having some leftover curry for lunch in just a few minutes. The best I have ever had comes from a package that I get from asian supermarkets. Some korean friends showed me how to make it when we were in college. It is called Golden Curry and comes in boxes about the size of a vcr tape. We usually get the medium hot kind. To make it, first I saute some chopped potatoes (maybe 4 medium), onions (one or two) & carrots (4-5) in a little oil until the onions are tender. Then I add diced beef (or you could do any kind of meat). Stir & saute for a few minutes. Add some water (enough to cover everything in the pot by an inch). Simmer for a few minutes. Break up the curry (it looks like a big chocolate bar) and drop it into the pot. Stir & simmer until curry blocks dissolve and veggies & meat are cooked. If it gets too thick you can add more water, but you don't want to dilute the flavor. It's looks like beef stew. Serve over rice. This is the best I've ever had, AND i noticed recently that a Walmart near us carries this kind of curry seasoning.

If you'll do a search for "curried chicken," you will find my all time favorite curry recipe!
