Anyone have a good meringue cookie recipe?

I made some from an internet recipe, but they were too gritty. You could feel the sugar granules. I'd like to add nuts or chocolate bits to them too.

Sarah, please post this instead. I did a search to find the recipe online and noticed right after I posted that the original link had a very immodest photo of a woman in a dieting advertisement.

Ooh! YUM!! These are my new favorite cookies!! They are cheap and fat free! And delicious!!

You could probably modify the recipe you have by using super fine sugar. Or make your own super fine sugar by putting it in the food processor for a few seconds. Also, be sure you add the sugar slowly and keep mixing until it dissolves. (Test it by rubbing a little between your thumb and forefinger, it should feel smooth, not gritty.)

If you'd like my recipe, here it is, off the top of my head. Separate 3 egg whites and let them come to room temperature. Beat until foamy. Add 1/4 tsp cream of tartar and beat until soft peaks form. Slowly add 3/4 cup super fine sugar and beat until dissolved. Bake at 250 for at least an hour. They should be hard and crunchy, not soft in the middle.

My very favorite is to add 1 tsp peppermint extract, mini chocolate chips, and green food coloring!!!! Yum, yum, yummy!!!
