Santa Fe Chicken - recipe please?

I have read rave reviews about the Santa Fe Chicken, but can't find it on any search. Would someone please post it or the link to it?

4 -6 breasts of chicken
1 can corn drained, frozen ok
1 can black beans drained
1 jar salsa, I make my own.
1 8 oz. pk cream cheese


tortillas or rice

place chicken in crockpot with beans and corn. Add salsa. Cook on high 4 hours, depends on your crock pot. 30 min. befor serving add cream cheese and stir. Turn to low setting.
Serve with rice or tortillas.

this is santa fe soup, it was good (I know not what you where looking for but still really good


1 lb Cooked ground beef, or 2-3 veggie burgers thawed
1 packet taco mix
1 packet ranch dressing mix
2 cans pinto beans
1 can black beans
1 can corn
1 can diced tomatoes with chilies ( I chopped up 2 fresh chilies with regular can tomatoes)
Optional Diced green onions
Pepper to taste
Cook beef, drain fat. Add all to crock pot. DO NOT drain the juices from the beans , corn or tomatoes. Remember this is a soup.
Heat until cooked through, my crock pot on high was 3 hours.
Top with cheese, sour cream or guacamole, serve with tortilla chips, or corn bread.

1 can black beans, drained and rinsed
1 can corn
1 cup salsa
4-6 breasts of chicken
cheddar cheese

In a crockpot place the beans and corn and 1/2 cup salsa. Place the chicken on top with the rest of the salsa on top of that. Cook on high for 3 hours or low for 6 hours. Add 1 hour if chicken is frozen.

When done serve as is with cheese sprinkled on top. OR cut up chicken, put back in crock, mix all up with cheese and serve with tortillas (rice, sourcream, etc.). We love to make burritos from ours and it makes it last longer.

To help maximize this recipe when I make it, I make rice and then add it into the crock pot and then serve the mixture on tortilla's.

I have made it with chicken, turkey and pork. Its a great recipe to use up left overs!

Melissa, thank you for posting your recipe also. DH doesn't not like cream cheese, but I can put it in somethings, if you can't taste it. I was crossing my fingers on this one. :-) Now I can make this, remove his portion and add the cream cheese for the rest of the family. I wouldn't have thought of that.
Thanks to you and Lavafrogg for the ideas on how to extend the meal. I always appreciate ways to make our dollars stretch!
