Super easy/cheap casserole

One night recently we were in a hurry and short on food.... ever been there??? Anyway, in trying to invent something for dinner I came across something my kids loved. The ingredients: leftover brown rice, leftover ground meat, 2 cans of Ranch Style beans, and a little cheese. I combined everything in a casserole dish and warmed it in the microwave til the cheese melted. My girls often get concerned when I tell them I'm "inventing" dinner, but this time, they all loved it. Tonight I'm making it with some leftover chicken. It really doesn't need seasoning as the ranch style beans spice it up. Hope you all enjoy it!

Sorry about that, I forget that Ranch Style beans are a Southern thing. They are pinto beans with chili powder seasoning them. So they taste like chili beans....you could probably acheive the same result by seasoning the pinto beans with chili powder, onion powder & garlic powder or taco seasoning. I hope this clarifies things for you.

I have to tell you a story. We have "inventions" for meals, too. Especially when my husband isn't home, we're likely to have an invention made out of all the leftovers in the frig. On one invention night, my 6yod said to her 9yo brother, "When I'm a mama, I'm going to invent recipes, and my children will have to eat it with a smile, whether they like it or not. And, John, I'm going to talk to your wife and teach her how to cook weird stuff, too!" :-) |
