Make ahead salads for summer?

I need summer salad recipes. In the evenings we often take a dinner along on an outing and I need some salads in the fridge that I can make ahead and have ready to go. I have a couple that we love (an antipasto with salami/swiss/veggies and a spiral noodle with chicken chunks/pea pods/seseme seeds/veggies in a sweet and sour dressing). I like tuna pasta salad at the local deli, but when the one I make is horrible! I also like potatoe salad and wonder if there is any way to make a potatoe salad with enough protein to make it a meal (lots of hard boiled egg?). All of us like cold pasta salads and I would LOVE to have some new recipes this summer. Things that use leftovers or surplus veggies would be great! Any ideas?

If you did baked beans or hard boiled eggs you could then make a salad as a side. Here are a couple of salads we like

Fall Salad (but you can get the ingredients all year)
celery
apples
parlsey leaves
celery leaves
walnuts
raisins

Chop all those up in the quantities that suit your family. Then add the following dressing.
walnut oil (I've used canola oil just fine)
salt
lemon juice

Broccoli Cheddar Salad
8 oz elbow
4 cups broccoli florets
1 med red pepper diced
1/2 cup chopped walnuts
1 tsp basil
1 tsp sugar
1 tsp salt
3 Tbsp cider vinegar
3 Tbsp lemon juice
3 scallions
12 oz cheddar cubed
Cook pasta adding the broccoli and red pepper during the last six minutes. Saute walnuts 2-3 minutes. Remove from heat and add basil, sugar,salt, vinegar and lemon juice. Set aside. When pasta is firm-tender add scallions to boiling water. Drain. Toss all ingredients together.

Mexican Salad
1 head lettuce shredded
2 tomatoes chopped
1 medium onion chopped
1 pound cheddar shredded
16 oz can pinto beans
12 oz catalina dressing

tortilla chips

Toss together and serve with tortilla chips.

I made a yummy salad for out of town family visiting last week. It contained:

1# Bow tie pasta
1# Brocolli lightly steamed (still a slight crunch)
1 pt Cherry Tomatoes
1 Cucumber-scored, seeded, sliced and quartered
Homemade Parmesean Italian dressing to cover
Fresh Basil

I added some pepperoni and mozzerella to the leftovers for a new twist. It was yummy!

Add chuncks of ham, salami, or cheese to potato salad to add some protien.

I love this one...

Crunchy Oriental Salad

1 head of Napa (curly, long-leafed variety) cabbage, chopped
5 green onions chopped finely
toss together

In skillet, melt 1 stick butter; add a small bag of slivered almonds, 1/2 cup sesame seeds and 1 package of uncooked ramen noodles until the butter is absorbed into the other ingredients. Be careful not to burn the sesame seeds...

Add skillet mixture to cabbage and onions.

Dressing is 1/2 cup vegetable oil, 1/2 cup sugar, 1/4 cup white vinegar and 1 Tbsp soy sauce. Whisk together then pour over salad.

I've a bean salad that is very different but really yummy...

Ranch style beans
chopped dill pickles
diced tomatos
this marinated in catalina dressing(cold)
Right before serving mix with some frito chips!


My potato salad has 8med potatos, 6boiled eggs, miracle whip, small amount prepared mustard, sweet pickle relish, chopped purple onion, sprinkle with chili powder(optional)

I love chicken, tuna and ham salads...just mix with chopped boiled eggs, your choice of pickles, and mayo to taste ( I do add shredded cheese to my ham salad) Great on a summer day!

You can add nuts to any green salad...we especially like sunflower seeds


We also love a greek salad:

Marinate overnight in balsamic vinagrette/and 1tbsp honey....artichokes,olives, bellpeppers(a variety of colors) purple onions and mushrooms

before serving add grape tomatoes and crumbled feta cheese ; serve over salad greens!



Summer veggie salad...marinate bellpeppers(3kinds) puple onion, muchrooms, cucumber slices, squash and zuchinni in Zesty italian dressing...add monterey cubes, cheddar cubes, and cherry tomatoes! ( you can add any of your favorite veggies to this)

I just remembered this one....
Marinate some cut up boneless chicken in raspberry vinagrette then cook it and add more of the vinagrette into the pan so that it carmelizes. Toss that into some garden salad. Use the vinagrette as your dressing. Annette

does anyone know how to make that broccoli salad that has sunflower seeds, raisins and bacon in it? -Melissa

I make a broccoli salad with broccoli, raisins and carrots in it. Just slice the carrots real thin and chop the broccoli fine. Them mix up mayonnaise, sugar and vinegar to taste. Mix it in with the veges and raisins and let set in fridge until ready to eat.
We also make a salad called a layerd salad. You put frozen peas on the bottom, then add lettuce, carrots, and any other veggies you like. Then add chopped hard boiled eggs and cover the top all over with mayo to seal. Sprinkle grated cheddar cheese on top of the mayo and bacon bits. Fridge until needed. When serving, you can just leave it like it is or toss everything together. Add your choice of dressing.

Our broccoli salad is made up of broccoli, raisins, red onion, and crisped bacon. The dressing is mayo, vinegar, and sugar. It is rich, but good in moderation!

Fruit salad is another one that is really easy and also really good!! :0) If you want to add apples to it, then make sure that you sprinkle some lemon juice into it to.

A favorite summer salad of ours (not protein, though)-

Refrigerator Pickles
7 cups sliced cucumbers
1.5 cups chopped onion
1 cup apple cider vinegar
1.5 cups sugar (can cut this down a little)
2 Tablespoons salt

Stir all together. Then stir every 5 minutes for 20 minutes. Store in refrigerator.

We had 24 hour salad for dinner tonight;

4 c. lettuce/romaine
1 c. shredded carrots
1 c. shredded cheese (used fat free cheddar)
2 T. chopped green onion
3 boiled eggs sliced
3/4 c. mayo (used fat free)
1/2 t. lemon juice
(called for bacon-I omited)

Layer all ingredients in order and spread mayo over top to form a seal. It can sit for 2 to 24 hours. Toss together before serving. It was yummy! I think you could add a little more or less of any of these ingredients to your taste-enjoy!

There is a Russian salad I learned to make from my mother in law that is really good, but very different. You may even say yuck to think of it, but try it first!

Cooked potatoes cubed ( about 3-4)
1-2 cooked beets cubed (or canned ones, not pickled)
2 cooked carrots peeled and diced fine
2-3 dill pickles diced fine
1 can of kidney beans rinsed
salt to taste
chopped green onions or some onion powder
about 1-2 T. oil
Mix all together carefully!
Serve with a bread for a complete protein

Ranch style beans are a brand of beans. Our walmart carries them. Look for a black label....there are several varieties, I use the original. I can get them at other grocery stores in my area also....Maybe one that has a large variety...like publix or albertson's HTH enjoy all your new recipes, I know I'm enjoying this thread!

Yes, this is a great thread! So far we've had the greek salad and everyone loved it. I'll share my two salad recipes in case anyone is interested. I'm not really into quantities as you'll see.

Chinese Chicken Pasta Salad

rotini or other squiggly pasta
cooked chicken breast, diced
pea pods, cauliflower, broccoli - could be steamed, but I don't
green onions
seseme seeds - a couple of Tablespoons

The dressing is white vinegar, oil, honey, garlic powder, salt, pepper, ginger
--------------------------------------------------------------------------------------------------------------------------------------------------
Antipasta Salad (This one I came up with to mimic one from a local deli)

colored rotini
hard salami, cut up
swiss cheese, cut up
red onion, caulif., broccoli, chunks
2 or 3 tomatos
minced garlic
parmesian cheese

The dressing is red wine vinegar, oil, italian seasoning, garlic powder

Questions about the Greek Salad:

Do you use canned artichokes already in a marinade? Like Sam's Club sells?

Do you use black olives? Green olives? Another type of olive?

Do you use button mushrooms raw? Canned mushroom slices? Gourmet mushrooms of a particular brand?

My dh and I LOVE the Greek salad at Panera Bread. It would be great to have our own Greek salad at home! THANK YOU!!

You can use these veggies any way you like...

I use canned artichokes, (but they aren't marinaded) black olives, and raw mushrooms

Also, I might mention; I use very little of the marinade when serving...I allow everything to marinade several hours, and they are usually heavy with flavor...of course everyone will have their own preference. Enjoy!

Julie, When I made the Greek Salad I used quarterd artichokes from the grocery that were NOT marinated. I think that another marinade would compete with the flavor of the balsamic/honey dressing. I made basically the same one as listed above, but skipped the olives because I didn't have any. I used button mushrooms, but I think slices would work too. My feta cheese was low fat and tasted good. We both thought it was as good as Panera Bread's Greek Salad which we like as well.
