Zuchinni Bread Recipe

Does anyone have a good recipe for zuchinni bread (or anything else that uses zuchinni, for that matter)? TIA |

I have quite a few recipes with zuchunni! I make a zuchunni soup that I really like, most people when I say that they wrinkle their nose, but most when they taste it really like it!
One of our favorites to do was to slice thinly and fry in a little butter with some garlic powder and top with grated cheese and cover until melted. We had a recipe where you took cooked chicken and sliced zuchuni, a can of tomatoes diced, I think it was and other vegetables and cooked it all. (You had some broth in there too.) spice it with salt and pepper and then serve with rice and homemade tortillas. |

Another way to have zuchinni is to slice and dip in egg and than bread crumbs with some seasonings and then fry. Taste good that way too! |

Zuchini is a wonderful vegetable. That soup sounds great MJVA24! Can you post the recipe?
I have a book called the Zuchini Sampler. Every recipe which includes main dishes, side dishes, desserts, etc all are made with zuchini. Some of our favorites from the book are chocolate zuchini cake, zuchini lasagna and zuchini and pineapple muffins. They are all copyrighted so I can't post them. Sorry.
I'm hoping that ours grows well so we can get a good bunch.
My daughter just loves making it sliced with butter and fresh garlic and pepper.

Zucchuni Soup
1 cube of butter
1c. chopped onions
10 c. sliced zucchuni
1 c. celery
1 T. parsley
1 t. garlic powder
1/2 t. basil
2 c. chicken broth
Bring to a boil and cook until soft, when soft carefully blend in blender (it is very hot so be careful) until all is blended. Reheat if needed and serve with grated chedder cheese. (Taste for salt and spices) |
