I have lots of dry beans (black, pinto, kidney, white, navy etc.) and would like recipes that use beans all sorts. It doesn;t matter if they call for canned or cooked beans as I know how to cook them, I just don't think of ways to eat them other than just plain cooked beans or chili. Anything will be nice!

More With Less Cookbook has some really good recipes. One that I've changed from there is Italian Beans and pasta.
Use whatever beans you like. Saute some of your favorite sausage with onions and garlic, add crushed tomatoes, cooked pasta and cooked beans. Simmer until all flavors are well mixed.
Soup with any of your favorite veggies, lots of garlic and onion, tomato juice for the liquid and barley or pasta.

I use mine in salsa. Cook, then add corn, Rotel and a little red wine vinegar and oil to taste. Add fresh cilantro. Chill - tastes best the next day!

My 45 year old dh recently had a heart attack. He is on an extremely low-fat diet (compared to what he is used to). I now add cooked beans to recipes to reduce the meat by at least half. We seem to prefer Pinto Beans in most beef items, and Great White Northern Beans in Chicken items, except our All-Bean Chili (no meat) which is heavy on red kidney beans.

It doesn't really take a recipe. I simply estimate the amount of meat (1 Cup or so) and add that many cooked beans which I cook in bulk and have frozen in one cup portions. Works great in tacos, casseroles, soups and stews. Depending on the texture my family prefers, I may leave whole or mash in the food processor. My teen sons didn't like the idea at first, but are adjusting really well.

The heart specialist has been so pleased with dh's progress, that he was just told he doesn't have to return for 5 months. His heart attack was less than a month ago, so apparently it works quickly in dropping cholesterol rates. Linda in KY

For refried beans, just take cooked beans and mash them with butter (about 2-3 T per pound of dried beans), milk (amount depends on preferred texture), salt, pepper, and garlic powder (if desired).

Bean Soup (my own recipe)

2 cups dried beans
4 cups chicken broth
2 carrots, chopped
1 onion, chopped
2 T butter

Either soak beans overnight or quick soak by bringing beans to boil in water, simmer 2 minutes, remove from heat, and let stand covered for 1 hour.

Add enough water to cover beans, cover and simmer beans for about 2 hours or until beans are tender. Add water as needed. Drain beans.

Saute carrots and onion in butter. Add to beans along with chicken broth. Heat til warm.


I also have made ham soup by adding cooked beans to ham broth (seasoned with salt, pepper, garlic, and italian seasoning), as well as cooked carrot.

a super bean dish is
1 can pinto beans, drained
1 can navy beans, drained
1 can diced tomatoes
italian seasonings
warm together and serve over brown rice
(can certainly substitute home cooked beans)

A great bean soup that has become a staple with us is:

1can pinto beans
1can navy beans
1can white beans
1can kidney beans
2 cans (or frozen) corn
2cans stewed tomato
1 can chili peppers
1 package of ranch dressing mix

This is fast and easy. Dump it in a pot and let it cook. The longer the better:-) You can also add a pound of ground beef and onions if you would like a "heartier" dish.
